Title: GS3 - The Nurses’ Health Study: The Latest Findings On Food Choices and Major Health Outcomes.

Learning Objectives:
- Appraise the impact of the Nurses’ Health Study on health status of women.
- Discuss the latest findings on dietary fat, carbohydrate and protein to prevention of cardiovascular disease, diabetes and breast cancer.
- Translate findings into a description of the “ideal” diet for optimal health outcomes.
The Nurses’ Health Study has followed approximately 238,000 nurses for decades and continues to provide new insights into prevention of major diseases. This presentation will review the latest evidence relating types of dietary fat, carbohydrate and protein to risks of major health outcomes. Combined with not smoking and with physical activity, optimal dietary choices can prevent the large majority of heart disease, diabetes and many cancers. Unfortunately, the emphasis on low-fat diets over the past 40 years has been a distraction from food choices with major health benefits.
